For the people who have learned to identify as Mexican, tacos are a basic way in which we ingest food. Whatever dish comes surrounded by a tortilla is already named a taco. Tortillas are the daily corn bread for millions of humans for generations, and tacos are a historical archive where to taste political struggles, migration paths, economic and environmental issues.
The question with MX/US border tacos is, of course, a question of territory, of colonial trauma and class ordeals. The fact that communities on both sides of that line make traditional tacos with wheat tortillas already speaks of the complexity of the “open wound” that the border still is, as Gloria Anzaldúa named it.
Paloma will cook as she learned from home: self-made wheat tortillas with diverse veggie, vegan, and meat fillings offered with chili sauces and other toppings.
