This iteration of Aural Oral explores the soundscapes of Swiss viticulture and agroecology, commencing with recordings done near Vevey during the vendanges of Tyalos and Matthias Orsett and subsequent processing of the harvest in the cave in Saint-Légier-La Chiésaz. The mix layers the soundscapes of the harvest, destemming, and pressing while weaving in the subtle soundscapes of the fermentation tanks. The mix continues with a combination of recordings that undulate through the fields of Praz Bonjour, an agroecology project in Blonay. This recording of Aural Oral was realized with the support of foodculture days.
Aural Oral is a series of site-specific studies and sensorial junctures in agricultural research, offering a sonic reflection on processes of cultivation and consumption. The meal pairs an auditory archive of its ingredients with its ingestion, implementing various microphones to transmit a series of recordings of culinary and cultivation actions. Each accompanying track sketches a sonic cartography of the site, proposing resonant reflections upon cultivation that extend beyond the domain of the gustatory. Aural Oral draws reference to acoustemological research, as coined by Stephen Feld, valorizing methodologies of “knowing-with and knowing-through the audible.”
The sound piece will be played throughout the evening, offering an immersive listening space in Les Complices. It will be accompanied by pozole, a pre-colonial Mexican dish taught to Grace by her grandmother, and a conversation around the complex histories of the dish. Ingredients harvested from Praz Bonjour in continuation of the collaboration.
